Lentil Picadillo

This lentil picadillo dish cooked with a tomato broth, carrot, potato, and peas is perfect for delicious tacos accompanied by sauce and rice. You won't believe it's not made with meat! Delicious!

  • 1 clove garlic
  • 4 tomatoes
  • 1/4 onions
  • 1 cup chicken broth
  • 1 tablespoon vegetable oil
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups onion, chopped
  • 1 cup potato, cut into small cubes
  • 1 cup carrot, cut into small cubes
  • 1 cup peas
  • 2 cups lentils, precooked
  • 1 pinch salt
  • corn tortillas
  • salsa
  • fresh cilantro
Preparation

  • Blend all the broth ingredients very well.
  • Heat a pot with the oil, cook the garlic, the onion, add the potato, the carrots, the peas, and the lentils.
  • Add the blender mixture, season with salt to taste, and cook until the liquid reduces.
  • Serve in a taco with sauce and fresh cilantro leaves. Enjoy.
