Lentils in Vinaigrette

Lentils are very nutritious; you can make this lentil vinaigrette recipe for a very healthy appetizer. Delicious!

  • 300 grams lentil legumes La Asturiana®
  • 1 chives, fresh
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 clove garlic
  • 1 tablespoon lime juice
  • 4 tablespoons extra virgin olive oil, Sierra de Gata® *
  • 2 tablespoons vinegar, Colavita® *
  • 50 grams tuna in oil, Pescamar® *
  • 2 eggs, cooked
  • salt, Sea Foam® *

  • We put the lentils in a pot with water.
  • When the water boils, we cook the lentils until they are tender (about twenty to thirty minutes) and drain them.
  • On the other hand, we chop the spring onion, green pepper, red bell pepper, and garlic clove into brunoise (very small diced pieces).
  • We mix the spring onion, garlic, green pepper, red pepper, lemon juice, olive oil, and vinegar.
  • We add the seasoning to the lentils and mix well.
  • We let the mixture sit in the refrigerator for one hour.
  • We serve it warm as a salad along with some bonito in oil or some boiled and peeled eggs, all on a bed of mixed lettuces.
