Lettuce Tacos with Beef Salpicón

  • 700 grams beef tenderloin, fat-free
  • 1/2 onions
  • 1 head garlic
  • water
  • pinches salt
  • 3 tomatoes, diced
  • 1/2 onions, sliced
  • 4 serrano chiles, finely chopped
  • 1 tablespoon fresh cilantro, finely chopped
  • 1 teaspoon oregano
  • 2 teaspoons olive oil
  • 2 tablespoons white vinegar
  • 4 limes, cut in half
  • 12 leaves lettuce
  • avocado, for garnish
  • radish, sliced for garnish
  • green onion, in half rings, for garnish

  • In a pot with water, cook the beef fillet with the onion, garlic head, and salt for 1 hour. Let it cool, shred, and set aside.
  • In a bowl, mix the meat with the tomato, onion, serrano chili, cilantro, oregano, olive oil, white vinegar, lime juice, and season with salt and pepper.
  • Place a bit of salpicón on a lettuce leaf, add avocado slices, radishes, and garnish with rings of green onion. Enjoy.
