Lettuce Tacos with Beef Salpicón

During this hot sunny season, there is nothing better than eating very healthy and refreshing dishes such as these lettuce tacos with fillet of beef fillet mixed with tomato, onion, cilantro, a touch of olive oil and oregano. Awesome!

700 grams beef tenderloin, fat-free
1/2 onions
1 head garlic
water
pinches salt
3 tomatoes, in cubes
1/2 onions, filleted
4 serrano chiles, finely chopped
1 tablespoon fresh cilantro, finely chopped
1 teaspoon oregano
2 teaspoons olive oil
2 tablespoons white vinegar
4 limes, cut in half
12 leaves lettuce
avocado, to decorate
radish, sliced to decorate
green onion, in half hoops, to decorate

In a pot with water, cook the beef filet with the onion, the head of garlic and salt for 1 hour. Let cool, unravel and reserve.
In a bowl, mix meat with tomato, onion, serrano pepper, cilantro, oregano, olive oil, white vinegar, lemon juice, season with salt and pepper.
Place a bit of salpicón on a lettuce leaf, add slices of avocado, radishes and decorate with onion rings. Enjoy
