Light and Delicious Burgers

It seems to be a bit of a strange mix of ingredients, but it is really delicious. These burgers are different from the ones we've all tried; if you say you won't like them, it's because you haven't tried them, and I'm saying this as someone who loves meat!
Ingredients
8
Servings
  • 1 package hamburger bun, (8)
  • 6 eggs
  • 1 bell pepper, large
  • 1/2 onions, medium
  • 80 grams panela cheese
  • 1 pumpkin
  • 1 chayote
  • 1 teaspoon salt
  • 1 tablespoon parsley, salt to taste
  • 1 1/2 tablespoons cornstarch
  • 1 cup vegetable oil, as needed
  • 1 tablespoon mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon ketchup
Preparation

Medium
  • Wash all the vegetables very well.
  • Once the chayote, squash, bell pepper, and onion are well cleaned, chop them very finely. Do the same with the panela cheese and mix all these ingredients in a bowl.
  • In a separate bowl, break the eggs and whisk them with salt, dried parsley, and cornstarch until there are no lumps of the latter.
  • This mixture is added to the vegetable and cheese mixture and mixed again to incorporate everything very well. This will replace the meat in our dish.
  • Heat oil in a pan; once it is really hot, pour a bit of the mixture that will be our burgers with approximately 8 cm in diameter and 1 1/2 cm in thickness.
  • Leave it there until it browns; once this happens, flip it and repeat the process on the other side.
  • All the burgers need to be cooked very well, so they don't break apart. You need to add oil again every time it runs out.
  • Once well cooked, they are placed in a burger bun, and the lid is spread with mayonnaise, mustard, and ketchup to taste. They are now ready to be enjoyed.
