2 tablespoons coffee , soluble
2 tablespoons unflavored gelatin
1/4 cups water
1 cup light milk
6 tablespoons fructose
2 egg whites
1 pinch salt
1 tablespoon cocoa

Soak the gelatin in water.
Heat the milk in a pot along with the coffee, cocoa, and half of the fructose, without letting it boil.
Remove from heat and incorporate the hydrated gelatin, stirring until it dissolves, and let it cool completely.
Beat the egg whites with a pinch of salt; once they start to froth, add the other half of the fructose until they reach stiff peaks.
Add a little of the egg whites to the milk and the rest in a folding manner.
Pour it into the cups and refrigerate completely until very cold.
