Low-Calorie Coffee Mousse

  • 2 tablespoons coffee , soluble
  • 2 tablespoons unflavored gelatin
  • 1/4 cups water
  • 1 cup light milk
  • 6 tablespoons fructose
  • 2 egg whites
  • 1 pinch salt
  • 1 tablespoon cocoa

  • Soak the gelatin in water.
  • Heat the milk in a pot along with the coffee, cocoa, and half of the fructose, without letting it boil.
  • Remove from heat and incorporate the hydrated gelatin, stirring until it dissolves, and let it cool completely.
  • Beat the egg whites with a pinch of salt; once they start to froth, add the other half of the fructose until they reach stiff peaks.
  • Add a little of the egg whites to the milk and the rest in a folding manner.
  • Pour it into the cups and refrigerate completely until very cold.
