Mediterranean Salad with Zucchini Noodles

Prepare this original salad based on Zucchini Noodles Eva® that replace the carbohydrates in your dish, this mix of delicious and crunchy noodles with Mediterranean ingredients like fresh cherry tomatoes, fresh basil, cucumber, and artichoke hearts mixed with a touch of olive oil and served with a Greek ranch dressing made with yogurt that will drive you crazy.

  • 2 Eva® clam of zucchini noodles, 300 g each
  • 1 cup yogurt, for the dressing
  • 1 tablespoon garlic powder , for the dressing
  • 1 tablespoon onion powder, for the dressing
  • 1/2 tablespoons parsley , finely chopped, for the dressing
  • 1 tablespoon fennel, finely chopped, for the dressing
  • 3 tablespoons yellow lemon juice , for the dressing
  • 1/4 cups Parmesan cheese, for the dressing
  • 1/4 cups cow's milk
  • salt and pepper
  • 1 cup cherry tomato , colored, halved
  • 1 cup fresh basil leaf
  • 1 cucumber, halved, with skin
  • 1/4 cups red onion, sliced
  • 1/2 cups artichoke heart, cut in half
  • 1/4 cups feta cheese , crumbled
  • 2 tablespoons olive oil
  • 1 pinch salt and pepper

  • Heat a small pot over medium heat with water and salt until it boils. Cook the Zucchini Noodles Eva® for 3 minutes. Place in ice water to stop the cooking, strain, and set aside.
  • For the dressing, blend the yogurt with the garlic powder, onion powder, parsley, fennel, lemon juice, Parmesan cheese, milk, and season with salt and pepper.
  • In a bowl, mix the Zucchini Noodles Eva® with the tomatoes, basil, cucumber, onion, artichoke, cheese, a little olive oil, salt, and pepper. Serve with the dressing.
