Prepare this original Zucchini Noodles Eva® salad that replaces carbohydrates in your dish, this mixture of delicious and crispy noodles with Mediterranean ingredients such as fresh cherry tomatoes, fresh basil, cucumber and artichoke hearts mixed with a touch of olive oil. olive and served with a Greek ranch dressing based on yogurt that will drive you crazy.

Ingredients

4 portions
  • enough Water
  • 2 Eva® clam of zucchini noodles, 300 gc / u
  • 1 cup yogurt, for the dressing
  • 1 tablespoon garlic powder, for the dressing
  • 1 tablespoon onion powder, for the dressing
  • 1/2 tablespoons parsley, finely chopped, for dressing
  • 1 tablespoon fennel, finely chopped, for dressing
  • 3 tablespoons lemon juice, for the dressing
  • 1/4 cups parmesan cheese, for the dressing
  • 1/4 cups milk
  • to taste salt and pepper
  • 1 cup cherry tomato, of colors, cut in half
  • 1 cup fresh basil leaf
  • 1 cucumber, cut in half, with shell
  • 1/4 cups red onion, filleted
  • 1/2 cups artichoke heart, cut in half
  • 1/4 cups feta cheese, fallen apart
  • 2 tablespoons olive oil
  • 1 pinch salt and pepper

Preparation

Heat a pot over medium heat with water and salt until it boils. Cook the Zucchini Noodles Eva® for 3 minutes. Place in water with ice to stop cooking, strain and reserve.
For the dressing, liquefy the yogurt with the garlic powder, the onion powder, the parsley, the fennel, the lemon juice, the parmesan cheese, the milk and season with salt and pepper.
In a bowl mix the Zucchini Noodles Eva® with the tomatoes, the basil, the cucumber, the onion, the artichoke, the cheese, a little olive oil, salt, pepper. Serve with the dressing.

PRESENTATION

Serve your salad in a salad bowl and bathe with dressing.
