  • 95 grams butter, pasture-raised, unsalted
  • 1 1/2 cups coconut sugar, or Stir Sweetener
  • 5 tablespoons cocoa, or raw cacao powder
  • 1/2 teaspoons sea ​​salt, fine
  • 2 teaspoons vanilla essence
  • 1 1/2 eggs, organic
  • 53 grams spelt flour
  • 1/4 cups chocolate, at 71%, finely chopped

  • Preheat the oven to 170° C/ 340° F.
  • Grease and line a 22 cm mold or ⅛ sheet pan with parchment paper.
  • Melt butter in the microwave or in a small pot just until it looks milky. (Note: if you melt it too much, the brownies will crack).
  • Place the butter in a bowl. In the mixer (Mini Mixer) with the whisk: add the egg, vanilla, coconut sugar or Stir and mix.
  • Add melted butter, sifted cocoa, salt, and mix. Add flour.
  • Add nuts and chocolate gently with a spatula and pour into the prepared mold. Level with a spatula.
  • Sprinkle with Maldon salt.
  • Bake until a toothpick comes out with medium moist crumbs but not wet, in a convection oven on a tray takes about 15 mins. Be careful not to overbake them as they will dry out; they should be chewy and will firm up more as they cool. Let the brownies rest for 1 hour before cutting.
  • Unmold and cut into 9 large portions or 12 small ones with a serrated or chef's knife.
