Grease and line a 22 cm mold or ⅛ sheet pan with parchment paper.
Melt butter in the microwave or in a small pot just until it looks milky. (Note: if you melt it too much, the brownies will crack).
Place the butter in a bowl. In the mixer (Mini Mixer) with the whisk: add the egg, vanilla, coconut sugar or Stir and mix.
Add melted butter, sifted cocoa, salt, and mix. Add flour.
Add nuts and chocolate gently with a spatula and pour into the prepared mold. Level with a spatula.
Sprinkle with Maldon salt.
Bake until a toothpick comes out with medium moist crumbs but not wet, in a convection oven on a tray takes about 15 mins. Be careful not to overbake them as they will dry out; they should be chewy and will firm up more as they cool. Let the brownies rest for 1 hour before cutting.
Unmold and cut into 9 large portions or 12 small ones with a serrated or chef's knife.
