Nopal Enmoladas

Delicious recipe to prepare gratin enmoladas filled with nopales. Ideal for a tasty Mexican and vegetarian dish.

  • 250 grams mole sauce, in paste, of your choice
  • 14 corn tortillas
  • 4 nopales, medium
  • 1 tomato
  • 1 onion, small
  • 50 grams cheese, of your preference
  • 1/3 cups vegetable oil

  • Dissolve the mole with chicken broth or water until it is liquid. Set aside.
  • Slice the nopales widthwise so that they are strips the size of the tortilla.
  • Heat the oil and pass each tortilla one by one.
  • Make taquitos with the oiled tortillas and the raw nopales. Arrange in a baking dish.
  • Pour the dissolved mole over the taquitos.
  • Grate the cheese over the enmoladas, garnish with onion and tomato strips.
  • Bake at 180 °C for 20 minutes.
