250 grams mole sauce, in paste, of your choice
14 corn tortillas
4 nopales, medium
1 tomato
1 onion, small
50 grams cheese, of your preference
1/3 cups vegetable oil

Low
Dissolve the mole with chicken broth or water until it is liquid. Set aside.
Slice the nopales widthwise so that they are strips the size of the tortilla.
Heat the oil and pass each tortilla one by one.
Make taquitos with the oiled tortillas and the raw nopales. Arrange in a baking dish.
Pour the dissolved mole over the taquitos.
Grate the cheese over the enmoladas, garnish with onion and tomato strips.
Bake at 180 °C for 20 minutes.
