Nopal Tlacoyos with Beans

  • 4 baby nopales
  • 1/2 cups refried black beans
  • 1/2 cups panela cheese, grated
  • 1/2 teaspoons dried oregano
  • onions, finely chopped
  • fresh cilantro, to taste, finely chopped
  • cherry tomatoes, cut in half to taste
  • 1 teaspoon olive oil

  • On a grill, roast the nopales on both sides until cooked. Set aside.
  • In a pan with a little cooking spray, cook the beans for 5 minutes. Season to your liking.
  • Spread the nopales with a little beans and garnish with cherry tomatoes, panela cheese, red onion, cilantro leaves, and oregano. Enjoy.
