Oat and Coconut Cookies

  • 100 grams shredded coconut
  • 1 tablespoon sweetener
  • 3 eggs

  • Blend the oats and shredded coconut in the blender until the oats are powdered.
  • Add the 3 eggs and mix until you have a homogeneous mixture.
  • Add the sweetener you will be using, being careful not to make it too sweet since these types of extracts are sweeter than sugar, and knead by hand for better results.
  • Divide and bake the dough at 180ºC until they appear golden on the outside; the time will depend on the size of the cookies.
