Oriental Fried Cauliflower Rice

Reduce your carbohydrate intake with this oriental-style cauliflower rice. It features broccoli, scallion stalks, edamame, and is sautéed with soy sauce, lemon juice, and orange juice that you will surely love.

  • 1 cauliflower, large
  • 2 tablespoons sesame oil
  • 6 green onions, in slices including the stalks
  • 2 carrots, in cubes
  • 2 pumpkins, in cubes
  • 1 cup broccoli
  • 1/2 cups soy sauce
  • 1 orange, just the juice
  • 2 limes, just the juice
  • 2 tablespoons toasted sesame seeds

  • Clean the cauliflower and separate it into medium pieces. Process in a food processor until finely chopped, making sure the consistency is fluffy like rice. Set aside.
  • In a deep skillet or wok, heat the sesame oil over medium heat. Cook the scallions until translucent, then add the cauliflower, carrots, zucchini, and broccoli.
  • Cook the mixture for about 5 minutes over low heat, stirring occasionally.
  • Add the soy sauce, orange juice, and lemon juice, and mix well. Cook until all the vegetables are al dente. Serve and garnish with toasted sesame seeds.
