Reduce your carbohydrate intake with this oriental-style cauliflower rice. It features broccoli, scallion stalks, edamame, and is sautéed with soy sauce, lemon juice, and orange juice that you will surely love.
Clean the cauliflower and separate it into medium pieces. Process in a food processor until finely chopped, making sure the consistency is fluffy like rice. Set aside.
In a deep skillet or wok, heat the sesame oil over medium heat. Cook the scallions until translucent, then add the cauliflower, carrots, zucchini, and broccoli.
Cook the mixture for about 5 minutes over low heat, stirring occasionally.
Add the soy sauce, orange juice, and lemon juice, and mix well. Cook until all the vegetables are al dente. Serve and garnish with toasted sesame seeds.
