Perfect Vegetable Soup

  • Add the onion and garlic.
  • First, sauté the aromatics for about 5 minutes or until they are soft.
  • Slowly stir in the vegetables so they absorb the flavor and aroma of the aromatics, then add a little salt, and if you like, at this point you can add dried herbs, cumin, or crushed red pepper flakes, etc.
  • Add the cups of broth, cover the pot, and let it simmer (20 minutes). Afterwards, taste and adjust the seasoning if necessary.
