  • 1 cup pineapple, in pieces
  • 3/4 cups red bell pepper, diced
  • 1/2 cups red onion, chopped
  • 1/2 cups mango, cubes
  • 1/2 cups mango nectar
  • 1/4 cups fresh cilantro, chopped
  • 1/4 teaspoons lime zest
  • 1/4 teaspoons red chile, mashed
  • 1/4 teaspoons ground cumin
  • 1/8 teaspoons cinnamon powder
  • 4 fish steaks, skinless halibut
  • 1 tablespoon olive oil
  • 1 lime, juice
  • 1 tablespoon Maggi chicken bouillon

  • FOR THE SAUCE:
  • Combine the pineapple, bell pepper, onion, mango nectar, cilantro, lemon zest, red chili, cumin, and cinnamon in a medium bowl; cover.
  • Let marinate in the refrigerator for 1 hour.
  • Bring to room temperature.
  • FOR THE HALIBUT:
  • Place the halibut fillets in a large freezer bag, add the oil, lemon juice, and chicken broth.
  • Seal the bag and gently shake the bag to coat the fillets in the marinade.
  • Refrigerate for 30 minutes.
  • Preheat the broiler or grill.
  • Grill the halibut for 3 to 5 minutes on each side or until it flakes easily with a fork.
  • Serve the salsa over the halibut.
