Boil the potatoes with the skin until they are partially cooked, once ready, remove them from the heat and let them cool. Once cooled, peel them and slice into approximately 1 cm thick rounds and set aside.
For the dressing: mix in a bowl the cream, mayonnaise, and mustard; season with salt and pepper to taste.
In a baking dish, spray a little PAM and place a layer of potatoes, then continue with a layer of turkey ham and cover with the dressing, and so on until you reach the last layer that our dish will allow. NOTE: we must end with a layer of potatoes. Once we have the last layer of potatoes, we put our manchego cheese on top.
Preheat the oven to 180 degrees and bake the cake for approximately 25 to 30 minutes or until the cheese is fully melted and golden.
