  • Wash and disinfect the vegetables, peel the potatoes and cut them into cubes. Remove the seeds from the poblano peppers and cut them into strips. Slice the onion. Set aside.
  • Roast the tomatoes with the serrano peppers, once cooked blend them with the cilantro, garlic, chicken broth cube, and a little water. Set aside.
  • In a pot with very hot oil, sauté the potatoes, poblano pepper, and onion. Pour the vegetables into the sauce. Cook until the elements are well combined.
  • Season to taste and enjoy.
