Quinoa Salad with Spicy Chicken

If you still don't know how quinoa is made, this spicy chicken salad recipe is what you were looking for. In addition to having proteins, this quinoa dish is the perfect combination with vegetables. Ideal to take it from lunch to work, its citrus vinaigrette gives it a special flavor. As a tip, we recommend rinsing the quinoa several times before cooking.

  • 2 chicken breasts, whole
  • 1/4 cups olive oil, for the marinade
  • 2 tablespoons cajun seasoning, for the marinade
  • 2 tablespoons cayenne pepper, for the marinade
  • 1 teaspoon garlic powder, for the marinade
  • 1 teaspoon onion powder, for the marinade
  • 1 pinch salt, for the marinade
  • 1 pinch pepper, for the marinade
  • 1/2 cups orange juice, for the vinaigrette
  • 3 tablespoons lime juice, for the vinaigrette
  • 1 teaspoon chile flakes, for the vinaigrette
  • 1 tablespoon chives, for the vinaigrette
  • 1/2 cups avocado oil, for the vinaigrette

  • 2 cups quinoa, soaked and cooked
  • 1 cup corn kernels, yellow
  • 1 cup green beans, bleached
  • 1 cup asparagus, bleached and sliced
  • 1 cup peas, bleached
  • 1 cup goat cheese, fallen apart
  • lettuce, in sheets, for presentation
  • tomato, cut into quarters, for presentation

  • Place the chicken breast in a bowl and marinade with the oil, cajun, cayenne pepper, garlic powder, onion powder, salt and pepper. Set aside.
  • Heat a grill over high heat and cook until fully cooked, stand and cut.
  • For the vinaigrette: in a bowl, mix the orange juice, lemon juice, chili flakes, chives, avocado oil, and season with salt and pepper. Set aside.
  • In a bowl, mix the quinoa with the yellow corn, the green beans, the asparagus, the peas, the goat cheese, season with the vinaigrette and mix.
  • Serve on a deep plate, accompanied by lettuce leaves, chicken breast and tomatoes.
