Quinoa Salad with Spicy Chicken

If you still don't know how quinoa is made, this spicy chicken salad recipe is what you were looking for. In addition to having proteins, this quinoa dish is the perfect combination with vegetables. Ideal to take it from lunch to work, its citrus vinaigrette gives it a special flavor. As a tip, we recommend rinsing the quinoa several times before cooking.

Ingredients

4 servings
  • 2 pieces of chicken breast whole
  • 1/4 of Cup of olive oil for the marinade
  • 2 spoonfuls of Cajun seasoning for the marinade
  • 2 spoonfuls of Cayenne pepper for the marinade
  • 1 teaspoonful of garlic powder for the marinade
  • 1 teaspoonful of onion powder for the marinade
  • 1 pinch of Salt for the marinade
  • 1 pinch of black pepper for the marinade
  • 1/2 Cup of orange juice for the vinaigrette
  • 3 spoonfuls of lemon juice for the vinaigrette
  • 1 teaspoonful of chili flake for the vinaigrette
  • 1 tablespoon of scallion for the vinaigrette
  • 1/2 Cup of avocado oil for the vinaigrette
  • enough of Salt
  • enough of black pepper
  • 2 cups of quinoa soaked and cooked
  • 1 Cup of whole corn kernels yellow
  • 1 Cup of green bean bleached
  • 1 Cup of asparagus bleached and sliced
  • 1 Cup of pea bleached
  • 1 Cup of goat cheese fallen apart
  • enough of lettuce in sheets, for presentation
  • enough of tomato cut into quarters, for presentation

    Preparation

    Place the chicken breast in a bowl and marinade with the oil, cajun, cayenne pepper, garlic powder, onion powder, salt and pepper. Set aside.
    Heat a grill over high heat and cook until fully cooked, stand and cut.
    For the vinaigrette: in a bowl, mix the orange juice, lemon juice, chili flakes, chives, avocado oil, and season with salt and pepper. Set aside.
    In a bowl, mix the quinoa with the yellow corn, the green beans, the asparagus, the peas, the goat cheese, season with the vinaigrette and mix.
    Serve on a deep plate, accompanied by lettuce leaves, chicken breast and tomatoes.

    PRESENTATION

    With lettuce leaves and tomatoes, accompanied by a refreshing drink.

    TIPS

    Before cooking the quinoa, rinse it several times to remove the excess saponin, otherwise it could make your salad bitter tasting.
