Quinoa Stuffed Peppers

Prepare these quinoa stuffed peppers with a combination of vegetables such as: zucchini, corn kernels, spinach, and tomatoes. They are perfect for pampering your whole family while taking care of them, very easy to prepare and delicious.

  • 1 cup quinoa, rinsed
  • water
  • salt
  • 1 tablespoon olive oil
  • 1/4 cups red onion, finely chopped
  • 1 tablespoon garlic
  • 1 cup tomato, cut into cubes
  • 1/2 cups corn kernels
  • 1 cup pumpkin, cut into cubes
  • 1 cup spinach, cut into strips
  • 1 cup panela cheese, cut into small cubes
  • 1 tablespoon parsley, finely chopped
  • salt and pepper
  • 4 red bell peppers, 100 g each
  • parsley, for garnish

  • Preheat the oven to 180° C.
  • Bring water to a boil in a pot over medium heat and cook the quinoa with a little salt for 20 minutes or until it pops. Cool and drain.
  • In a pan over medium heat, heat the oil, add the red onion, garlic, tomato, corn kernels, zucchini, and spinach, and cook until the liquids reduce.
  • Add the quinoa, panela cheese, parsley, and season with salt and pepper.
  • Cut off the top of the pepper and, using a small knife, remove the seeds, fill with the previous mixture, place in a baking dish, and bake for 20 minutes or until the peppers are tender.
  • Garnish with parsley and serve accompanied by a fresh salad.
