Prepare these quinoa stuffed peppers with a combination of vegetables such as: zucchini, corn kernels, spinach, and tomatoes. They are perfect for pampering your whole family while taking care of them, very easy to prepare and delicious.
Bring water to a boil in a pot over medium heat and cook the quinoa with a little salt for 20 minutes or until it pops. Cool and drain.
In a pan over medium heat, heat the oil, add the red onion, garlic, tomato, corn kernels, zucchini, and spinach, and cook until the liquids reduce.
Add the quinoa, panela cheese, parsley, and season with salt and pepper.
Cut off the top of the pepper and, using a small knife, remove the seeds, fill with the previous mixture, place in a baking dish, and bake for 20 minutes or until the peppers are tender.
Garnish with parsley and serve accompanied by a fresh salad.
