Quinoa-Stuffed Poblano Pepper

4 Poblano chiles, roasted and deveined
2 tablespoons olive oil
2 tablespoons onion, finely chopped
1 teaspoon garlic, finely chopped
1 ancho chile, cut into strips
2 potatoes, cut into cubes
2 cups oyster mushrooms, fileted
1 eggplant, cut into cubes
1 cup quinoa, cooked
salt and pepper
2 avocados
3 tablespoons fresh cilantro
4 tablespoons soy milk
1 lime, just the juice

In a medium skillet, add olive oil and sauté the onion, garlic, ancho pepper, potatoes, mushrooms, eggplants, quinoa, and season with salt and pepper.
Stuff the peppers with the previous mixture. Set aside.
For the sauce, blend the avocados with cilantro, soy milk, and lime juice until it has a sauce consistency, season with salt and pepper.
Serve the pepper with the avocado sauce.
