Quinoa-Stuffed Poblano Pepper

Nothing is more delicious than a stuffed pepper, its great contribution of vitamin C and its quinoa filling will surely make you ask for more. They are also topped with a creamy avocado sauce that will better complement your diet.

  • 4 Poblano chiles, roasted and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 1 ancho chile, cut into strips
  • 2 potatoes, cut into cubes
  • 2 cups oyster mushrooms, fileted
  • 1 eggplant, cut into cubes
  • 1 cup quinoa, cooked
  • salt and pepper
  • 2 avocados
  • 3 tablespoons fresh cilantro
  • 4 tablespoons soy milk
  • 1 lime, just the juice

  • In a medium skillet, add olive oil and sauté the onion, garlic, ancho pepper, potatoes, mushrooms, eggplants, quinoa, and season with salt and pepper.
  • Stuff the peppers with the previous mixture. Set aside.
  • For the sauce, blend the avocados with cilantro, soy milk, and lime juice until it has a sauce consistency, season with salt and pepper.
  • Serve the pepper with the avocado sauce.
