Rainbow Salad with Egg Whites and Melon Yogurt

Delicious and healthy salad that includes fruits, vegetables, and Egg Whites. This salad is perfect as a main dish, thanks to the Egg Whites that provide the protein your body needs. The combination of vegetables with fruit is spectacular.

  • 50 grams San Juan® egg whites
  • 2 romaine lettuces
  • 50 grams melon
  • 30 grams carrot
  • 20 grams soybean sprouts
  • 20 grams Romaine lettuce
  • 20 grams beet
  • 20 grams jicama
  • 5 cherry tomatoes
  • 7 oranges, supremes
  • 7 walnuts, in halves
  • 150 milliliters yogurt, of melon

  • Place a square of plastic wrap in a cup, forming a cavity in the center, put the egg white inside, season with salt, and close with the ends up with a knot, then boil the egg white in water for 5 minutes, let cool, cut, and set aside.
  • Slice the ear lettuce, thinly slice the beet and the melon, make thin slices of carrot, and cut the jicama into fine juliennes.
  • Place a bed of romaine lettuce and arrange the ear lettuce and yogurt.
  • Place the other ingredients harmoniously on top: sprout, beet, melon, jicama, and carrot.
  • Decorate with San Juan® Egg Whites along with orange supremes, walnuts, and cherry tomatoes.
