Raw Carrot Muesli Bowl with Red Fruits and Goji

Recipe for a variation of muesli with very few cereals based on carrot and ground flaxseed in a mixture of apple juice and almond milk served with goji berries, pistachios, dehydrated apple, sunflower seeds with a sweet and subtle touch of grated coconut.

  • 2 carrots, grated
  • 1 peach, sliced
  • 1/4 cups apple juice
  • 1/4 cups almond milk
  • 1 tablespoon goji berries, dehydrated
  • 1 tablespoon pistachios
  • 2 tablespoons dried apple, whole for mixing and chopped for decorating
  • 1 tablespoon sunflower seeds
  • 1 tablespoon shredded coconut

  • Mix in a bowl the ground flaxseed with the carrot, peach, hydrate with apple juice, and almond milk.
  • Add the goji berries to mix with the pistachios, dehydrated apple, and sunflower seeds, incorporating everything well with the other ingredients.
