We rinse the red beans and soak them the night before.
We cut the vegetables into uniform cubes and sauté them in a pot with a little olive oil.
When they start to brown, we add the red wine, sauté the
mix and add the beans with the soaking water.
We cook the mixture over medium heat for 3 hours in a regular pot and for 1 hour in a pressure cooker. During this time, the heat will evaporate all the alcohol from the wine.
We season the beans with salt and serve them rested after 30 minutes.
