Seitan with Potatoes and Piquillos

When following a vegan diet, one of the most critical nutrients that must be taken into account is protein. Since animal-derived foods must be eliminated from a vegan diet, it is very important to find plant-based alternatives that provide sufficient protein. For this reason, seitan, along with other foods like tofu, has gained great popularity for its ability to provide large amounts of protein, as well as offering a texture very similar to cooked meat. Nutritionally comparing seitan and meat shows that seitan also provides fewer calories and less saturated fat than meat, making it a healthy alternative for all types of people.

  • 50 grams breadcrumbs
  • 150 grams wheat gluten flour
  • 1 1/2 liters vegetable broth
  • 3 tablespoons soy sauce
  • 1/3 teaspoons pimentón, sweet
  • 1/4 teaspoons pimentón, spicy
  • 1 onion
  • 1 carrot
  • 4 cloves garlic
  • 1 leek
  • 1 celery
  • 4 potatoes, or small potatoes
  • 1 tub piquillo chile
  • 3 tablespoons olive oil

  • To prepare the cooking broth for the seitan, sauté the vegetables in a pot with a little olive oil: onion, carrot, leek, garlic, and celery. They do not need to be cut into very small pieces. Add a little salt to facilitate the sweating of the vegetables. Once the vegetables are sautéed, add the water. If there are not enough vegetables for the broth, it can be enriched with vegetable broth concentrate.
  • In a bowl, weigh the dry ingredients: gluten flour, breadcrumbs, sweet and hot paprika. You can also add other spices to change the flavor of the seitan (curry, dill, fennel, cumin, pepper, nutmeg). Mix the dry ingredients well.
  • Add the soy sauce to the bowl and 1 cup of warm vegetable broth, reserving one to add gradually later in case the mixture needs more water.
  • Shape the seitan as desired, either into steaks or balls for cooking in vegetable broth. Depending on the shape and size, it will take more or less time to cook. Steaks (50-60g) will be cooked in 15-20 minutes, while the balls may take around 45-60 minutes.
  • Heat the pan to mark the seitan on the grill, flipping it until it acquires a texture similar to meat.
  • Clean the potatoes and keep the skin. Boil the whole potatoes in a pot with water and salt. Approximate cooking time is 30-40 minutes. Once the potatoes are cooked, remove the skin and chop them.
  • Slice some garlic and julienne the piquillo peppers. Sauté the garlic in a pan with oil and add the piquillo peppers to heat them. Finally, add the potatoes off the heat to mix well with the dressing.
