Soy-Enriched Consommé

  • 1 1/2 liters water
  • 3 serrano chiles, finely chopped
  • 1 sprig epazote
  • 3 zucchinis, diced
  • 1 onion, sliced
  • 1 clove garlic, mashed
  • 1 cup soy grits, cooked and drained.
  • 1 cube chicken bullion
  • 1 pinch salt
  • 1 lime, to taste

  • In a pot, boil one and a half liters of water.
  • Separately, in a container, dissolve the salt and the consommé in a little water.
  • Once dissolved, add them to the rest of the water.
  • Simmer, add the chiles, zucchini, onion, garlic, epazote, and soy semolina.
  • Let it boil for 30 minutes.
  • Serve hot and accompany with lemon juice.
