Stewed Zucchini

  • 2 zucchinis
  • 1/2 onions
  • 2 tomatillos
  • 1 corn kernel
  • 2 serrano chiles
  • deli ham, Bacon can be used.
  • 4 tablespoons oil
  • oaxaca cheese, It will be used for presentation. You can substitute Oaxaca cheese for panela cheese.

  • Cut the following ingredients into cubes: zucchini, onion, tomato, chili, and ham (or bacon).
  • In a skillet, add the oil; when the oil is hot, add the onion and bacon, and sauté them.
  • Incorporate the corn into the previous mixture.
  • Add the tomato and cook the mixture over low heat for 10 minutes.
  • Serve in a deep plate and add the Oaxaca cheese.
