My recipe for stuffed cucumbers with ground beef is delicious; it is an adaptation of a family recipe to which I made some modifications. It is a very tasty and simple preparation.
Carefully make an opening and remove the seeds inside the cucumber.
In a large bowl, add the meat with the crushed garlic and salt to absorb the flavor while you prepare the rest, refrigerate.
Chop the green onion, tomatoes, and bell pepper into small cubes, chop the celery stalk and parsley, and mix with the grated carrot.
Add all this to the ground meat along with the 2 eggs, bread crumbs, Worcestershire sauce, and pepper to taste, and mix well.
Once everything is well mixed, start filling the cucumbers and seal them with crossed toothpicks so that the filling does not come out.
In a large pot, add the milk and gradually introduce the cucumbers one by one for cooking. Cover the pot and let it cook for 20 minutes.
After 20 minutes, remove the toothpicks, serve, and if you like, you can add a layer of double cream cheese with béchamel sauce and melt it in the microwave for 50 seconds.
