Stuffed Cucumber with Ground Beef

My recipe for stuffed cucumbers with ground beef is delicious; it is an adaptation of a family recipe to which I made some modifications. It is a very tasty and simple preparation.

  • 6 cucumbers, to stuff (caigua)
  • 500 grams ground meat
  • 2 tomatoes
  • 1 onion
  • 1 tablespoon sweet paprika
  • 1 carrot, grated
  • 2 cloves garlic
  • 1 sprig celery
  • 5 leaves parsley
  • 2 eggs
  • 1 cup breadcrumbs
  • 2 tablespoons Worcestershire sauce
  • 600 milliliters cow's milk
  • 1 tablespoon salt
  • 1 teaspoon pepper

  • Carefully make an opening and remove the seeds inside the cucumber.
  • In a large bowl, add the meat with the crushed garlic and salt to absorb the flavor while you prepare the rest, refrigerate.
  • Chop the green onion, tomatoes, and bell pepper into small cubes, chop the celery stalk and parsley, and mix with the grated carrot.
  • Add all this to the ground meat along with the 2 eggs, bread crumbs, Worcestershire sauce, and pepper to taste, and mix well.
  • Once everything is well mixed, start filling the cucumbers and seal them with crossed toothpicks so that the filling does not come out.
  • In a large pot, add the milk and gradually introduce the cucumbers one by one for cooking. Cover the pot and let it cook for 20 minutes.
  • After 20 minutes, remove the toothpicks, serve, and if you like, you can add a layer of double cream cheese with béchamel sauce and melt it in the microwave for 50 seconds.
