Stuffed Cucumbers with Chicken Salad

  • 1 tablespoon chives, finely chopped, for the salad
  • 1/4 cups feta cheese, diced
  • 1 tablespoon lime juice, for the salad
  • 1/2 cups Greek yogurt, for the salad
  • 1 tablespoon garlic powder, for the salad
  • 1 tablespoon mustard, for the salad
  • 1 tablespoon salt, for salad, and to season cucumber
  • 1 pinch pepper, for salad, and to season cucumber

  • 2 tablespoons olive oil
  • 1 serrano chile, sliced, for decoration
  • 1 radish, cut into half-moons, for decoration
  • 1 green onion, sliced into rings, for decoration

  • For the chicken salad, in a bowl mix all the salad ingredients, season to your liking with salt and pepper, and set aside.
  • Using a peeler, remove the skin from the cucumbers and cut them in half. Use a spoon to hollow them out, drizzle with a little olive oil, season with salt and pepper to taste, and fill with the chicken salad.
  • Garnish with slices of serrano pepper, green onion, radish, and cilantro leaves. Serve.
