In a small pot with water, cook the nopales with salt and baking soda until tender. Let cool and set aside.
In a skillet over medium heat, heat the oil, add the onion, tomato, serrano pepper, and cook until they slightly change color, add the ricotta, season with salt and pepper, and cook for 5 minutes. Set aside.
On a cutting board, fill the nopales with the ricotta and close with small skewers. Set aside.
For the sauce, roast the tomatoes, onion, serrano pepper, and garlic on a griddle.
Blend the previous mixture, season with salt.
Serve the previous sauce on a plate and place the nopales tacos on top, garnish with cilantro.
