  • 1 cup chorizo
  • 4 eggs

  • 8 nopales, baby
  • 1 tablespoon oregano, dry
  • 1 tomato, in cubes, for the pico de gallo

  • 1/4 onions, in cubes, for the pico de gallo
  • 2 serrano chiles, in cubes, for the pico de gallo
  • 1 tablespoon fresh cilantro, in cubes, for the pico de gallo
  • 2 tablespoons lime juice

  • In a pan over medium heat, fry the sausage until golden brown. Add the eggs and mix to integrate, cook until you have scrambled egg well cooked, season and reserve.
  • Grill the nopales over medium heat in a griddle or pan on both sides until they are cooked. Season with a little salt, pepper and oregano.
  • For the pico de gallo, mix all the ingredients.
  • Place a little scrambled egg on a nopal and place another one on top. Serve with pico de gallo.
