Ingredients

4 servings
  • 1 Cup of sausage
  • 4 eggs
  • enough of Salt
  • enough of black pepper
  • 8 nopales baby
  • 1 tablespoon of oregano dry
  • 1 tomato in cubes, for the pico de gallo
  • 2 green tomatoes in cubes, for the pico de gallo
  • 1/4 of onion in cubes, for the pico de gallo
  • 2 Serrano cpeppers in cubes, for the pico de gallo
  • 1 tablespoon of coriander in cubes, for the pico de gallo
  • 2 spoonfuls of lemon juice

Preparation

In a pan over medium heat, fry the sausage until golden brown. Add the eggs and mix to integrate, cook until you have scrambled egg well cooked, season and reserve.
Grill the nopales over medium heat in a griddle or pan on both sides until they are cooked. Season with a little salt, pepper and oregano.
For the pico de gallo, mix all the ingredients.
Place a little scrambled egg on a nopal and place another one on top. Serve with pico de gallo.
