  • 1 cup chorizo
  • 4 eggs

  • 8 nopales, baby
  • 1 tablespoon oregano, dry
  • 1 tomato, diced, for the pico de gallo

  • 1/4 onions, diced, for the pico de gallo
  • 2 serrano chiles, diced, for the pico de gallo
  • 1 tablespoon fresh cilantro, diced, for the pico de gallo

  • In a skillet over medium heat, fry the chorizo until browned. Add the eggs and mix to combine, cook until the eggs are well scrambled, season, and set aside.
  • Grill the nopales over medium heat on a comal or grill pan on both sides until cooked. Season with a little salt, pepper, and oregano.
  • For the pico de gallo, mix all the ingredients.
