Stuffed Tomatoes and Stewed Nopales

Stuffed tomatoes and nopales with tuna, delicious and light. They are perfect if you are looking to take care of your figure; plus, they are very easy to prepare, giving you a tasty dish without sacrificing flavor. It's an excellent option for dinner or lunch.

  • 2 red beefsteak tomatoes, large
  • 2 nopales, large clean
  • 1/2 onions, small
  • 100 grams cheese, whichever you like best
  • 1 can canned tuna in water
  • 1 tablespoon olive oil
  • 1 teaspoon garlic
  • salt and pepper

  • Slice the top off the tomatoes and carefully scoop out the insides to keep the skin intact as a container. Reserve the insides.
  • Slice the nopales in half and place them in a baking dish with the slimy side facing up.
  • Chop the onion and what you scooped out of the tomato.
  • Stuff the tomatoes with cheese and a bit of onion and place them in the middle of the baking dish surrounded by the nopales.
  • Spread chopped tomato, onion, and tuna over the nopales.
  • Sprinkle everything with garlic powder, pepper, salt to taste, and olive oil.
  • Bake at 180°C for 20 minutes.
