Sweet potato cake

On this occasion we will prepare a very sweet cake without the need for sugar, for this we will replace the traditional sugar with homemade stevia powder. The sweet potato pie is delicious.

  • 1 teaspoon vanilla essence
  • 1/2 teaspoons cinnamon powder
  • 40 grams cornstarch
  • 1 teaspoon stevia
  • 500 grams sweet potato
  • 1/2 cups cow's milk
  • 100 grams butter

  • The first thing we are going to do to gain time in the preparation of this recipe is to make several longitudinal cuts to the sweet potato and we will cover it with a plate and place it in the microwave at maximum power for 13 minutes.
  • We will place in a container the following ingredients: 3 eggs, Stevia Powder, drops of vanilla essence, 1/2 teaspoon of cinnamon, milk and corn starch.
  • We beat the previous ingredients and add the butter in a semi-liquid state. Peel the sweet potato we had in the microwave, proceed to crush it to later add it to our previous mix and beat.
  • After 13 minutes, remove the sweet potato from the microwave and peel and crush with the help of a fork, to later add it to our previous mixture. Place the mixture in a baking dish, previously lined with baking paper and leave it for about 35 minutes. 180º C.
  • After the time, we will leave a little to cool, thus facilitating the demolding.
