Sweet Potato Cake

This time we are going to prepare a very sweet cake without the need for sugar, for this we will replace traditional sugar with homemade powdered stevia. The Sweet Potato Cake is delicious.

  • 1/2 teaspoons cinnamon powder
  • 40 grams cornstarch
  • 1 teaspoon stevia
  • 500 grams sweet potato
  • 1/2 cups cow's milk
  • 100 grams unsalted butter

  • The first thing we will do to save time in preparing this recipe is to make several longitudinal cuts in the sweet potato, cover it with a plate, and place it in the microwave on maximum power for 13 minutes.
  • We are going to place the following ingredients in a container: 3 eggs, powdered stevia, drops of vanilla essence, 1/2 teaspoon of cinnamon, milk, and cornstarch.
  • We beat the previous ingredients and add the butter in a semi-liquid state. We peel the sweet potato that we had in the microwave, proceed to mash it, and then add it to our previous mixture and beat.
  • After 13 minutes, we remove the sweet potato from the microwave and peel and mash it with the help of a fork, to then add it to our previous mixture. We place the mixture in a baking dish, previously lined with parchment paper, and let it bake for about 35 minutes at 180º C.
  • After the time is up, we let it cool a bit, making it easier to unmold.
