This time we are going to prepare a very sweet cake without the need for sugar, for this we will replace traditional sugar with homemade powdered stevia. The Sweet Potato Cake is delicious.
The first thing we will do to save time in preparing this recipe is to make several longitudinal cuts in the sweet potato, cover it with a plate, and place it in the microwave on maximum power for 13 minutes.
We are going to place the following ingredients in a container: 3 eggs, powdered stevia, drops of vanilla essence, 1/2 teaspoon of cinnamon, milk, and cornstarch.
We beat the previous ingredients and add the butter in a semi-liquid state. We peel the sweet potato that we had in the microwave, proceed to mash it, and then add it to our previous mixture and beat.
After 13 minutes, we remove the sweet potato from the microwave and peel and mash it with the help of a fork, to then add it to our previous mixture.
We place the mixture in a baking dish, previously lined with parchment paper, and let it bake for about 35 minutes at 180º C.
After the time is up, we let it cool a bit, making it easier to unmold.
