1 package tofu, solid
2 teaspoons canola oil
1 pinch table salt, abundant
1/3 cups peanut butter
1/4 cups sparkling water
2 teaspoons pasta, garlic
1/2 teaspoons ginger, dehydrated
1 tablespoon soy sauce, low sodium
1/2 lime juice
1/4 teaspoons sesame oil
2 cups cabbage, grated (white or purple)
2 cups carrot, grated
1/2 cups fresh cilantro, coarsely chopped
1/2 cups green onion, sliced
1 lime juice
drops sesame oil
table salt
black pepper powder
8 tortillas, small, warm
8 limes, wedges
peanuts, in pieces for garnish

Start by draining the tofu and placing it between paper towels for about 15 minutes to remove some of the moisture.
Cut the tofu into 1/2 inch or 1 cm pieces.
Meanwhile, mix in a bowl the peanut butter, water, garlic paste, ginger, soy sauce, lemon juice, and sesame oil.
Add water if the marinade sauce is too thick. This is the sauce for the tofu. Set aside.
Take a medium bowl and mix the carrots, cabbage, cilantro, and green onions.
Add the lemon juice and sesame oil drops.
Add salt and pepper to taste. Mix a little. This is the dressing for the tacos. Set aside.
Heat a non-stick skillet on the stove over medium to high heat.
Add the canola oil.
Add the tofu and cook until golden.
Add the vegetables and sauté for about 5 minutes (they should be al dente).
Add the sauce to the skillet.
Cook one or two more minutes or until the sauce has heated sufficiently. You will notice that the sauce thickens very quickly. Remove from heat.
Divide the tofu and vegetable mixture into 8-10 warm soft tortillas or crispy taco shells.
Drizzle with any leftover sauce, garnish with 1/2 teaspoon of natural Greek yogurt (if desired) and serve with a lemon wedge.
