Medium
  • Start by draining the tofu and placing it between paper towels for about 15 minutes to remove some of the moisture.
  • Cut the tofu into 1/2 inch or 1 cm pieces.
  • Meanwhile, mix in a bowl the peanut butter, water, garlic paste, ginger, soy sauce, lemon juice, and sesame oil.
  • Add water if the marinade sauce is too thick. This is the sauce for the tofu. Set aside.
  • Take a medium bowl and mix the carrots, cabbage, cilantro, and green onions.
  • Add the lemon juice and sesame oil drops.
  • Add salt and pepper to taste. Mix a little. This is the dressing for the tacos. Set aside.
  • Heat a non-stick skillet on the stove over medium to high heat.
  • Add the canola oil.
  • Add the tofu and cook until golden.
  • Add the vegetables and sauté for about 5 minutes (they should be al dente).
  • Add the sauce to the skillet.
  • Cook one or two more minutes or until the sauce has heated sufficiently. You will notice that the sauce thickens very quickly. Remove from heat.
  • Divide the tofu and vegetable mixture into 8-10 warm soft tortillas or crispy taco shells.
  • Drizzle with any leftover sauce, garnish with 1/2 teaspoon of natural Greek yogurt (if desired) and serve with a lemon wedge.
