Delicious tacos Thai with vegetables for healthy eating. Also to prepare your vegetarian friends a delicious meal to enjoy your kitchen.

Ingredients

4 servings
  • 1 package of tofu solid
  • 2 teaspoons of canola oil
  • 1 pinch of table salt abundant
  • 1/3 of Cup of peanut butter
  • 1/4 of Cup of mineral water
  • 2 teaspoons of pasta of garlic
  • 1/2 teaspoonful of ginger dehydrated
  • 1 tablespoon of soy sauce of low sodium content
  • 1/2 lemon juice
  • 1/4 of teaspoonful of Sesame oil
  • 2 cups of cabbage grated (white or purple)
  • 2 cups of carrot grated
  • 1/2 Cup of coriander chopped thick
  • 1/2 Cup of green onion cut
  • 1 green lemon juice
  • drops of Sesame oil
  • table salt
  • ground pepper
  • 8 tortillas small, warm
  • 8 lemon segments
  • peanuts in piece to decorate

    Preparation

    Start by straining the tofo and placing between paper towels for about 15 minutes to remove some of the moisture.
    Cut the tofu into pieces of 1/2 inch or 1 cm.
    Meanwhile, mix in a bowl peanut butter, water, garlic paste, ginger, soy sauce, lemon juice and sesame oil.
    Add water if the marinade sauce is too thick. This is the sauce for tofu. Reservation.
    Take a medium bowl and mix the carrots, cabbage, cilantro and green onions.
    Add the lemon juice and the drops of sesame oil.
    Add salt and pepper to taste. Mix a little. This is the dressing of the tacos. Reservation.
    Heat a non-stick pan on the stove over medium-high heat.
    Add the canola oil.
    Add the tofu and cook until golden brown.
    Add the vegetables and sauté them for about 5 minutes (they should remain al dente).
    Add the sauce to the pan.
    Cook one or two more minutes or until the sauce has heated sufficiently. You will notice that the sauce thickens very fast. Remove from the fire.
    Divide the mixture of tofo and vegetables into 8-10 soft and warm tortillas or crispy tortillas for tacos.
    Sprinkle with the sauce on top, garnish with 1/2 teaspoon of Greek-style natural yogurt (if desired) and serve with a lemon wedge.
