Remove the pulp from the avocado, season with spices, add olive oil, and set aside in the refrigerator.
Place water in a pot over medium heat, add vinegar and salt. Place the egg in a cup. Once the water is hot, use a ladle to create a whirlpool, and add the egg. When the egg is cooked, remove it from the water. Repeat this step with all the eggs.
Assembly: spread the seasoned avocado on the bread, place the spinach leaves on top, and then add the poached egg.
