Toasted bread, Spiced avocado, spinach and poached egg

Delicious breakfast for a weekend morning. An easy egg recipe, perfect to surprise the person you love most, avocado spiced on a delicious toasted bread, with a poche and spinach egg. Delicious!

  • 4 Bimbo® toasted bread
  • 2 avocados
  • 2 grams ground pepper
  • 1 gram ground cloves
  • 5 grams thyme
  • 12 leaves spinach
  • 4 eggs
  • 10 milliliters white vinegar
  • 1 1/2 liters water
  • 20 grams salt flower

  • Remove the pulp from the avocado, season with the spices, add olive oil and reserve in the refrigerator.
  • Place water in a pot over medium heat, add the vinegar and salt. Place the egg in a cup. Once the water is hot, with a ladle to form a whirlpool, add the egg. When the egg is cooked, remove it from the water. Repeat this step with all the eggs.
  • Assembly: spread the bread with spiced avocado, place the spinach leaves and on these the poche egg.
