Preparation
Remove the pulp from the avocado, season with the spices, add olive oil and reserve in the refrigerator.
Place water in a pot over medium heat, add the vinegar and salt. Place the egg in a cup. Once the water is hot, with a ladle to form a whirlpool, add the egg. When the egg is cooked, remove it from the water. Repeat this step with all the eggs.
Assembly: spread the bread with spiced avocado, place the spinach leaves and on these the poche egg.
