Toasted Bread with Salmon and Avocado Hummus

  • 1/2 cups chickpeas, cooked and drained, for the hummus
  • 1 1/2 tablespoons olive oil, for the hummus
  • 1 1/2 tablespoons lime juice, for the hummus
  • 1 clove garlic, for the hummus
  • 1/4 tablespoons cumin, ground, for the hummus
  • 1/4 tablespoons salt, for the hummus
  • 1/4 tablespoons black pepper, ground, for the hummus
  • 1 Avocados from México, for the hummus
  • 1 tomato, diced, for the pico de gallo
  • 1/4 onions, finely chopped, for the pico de gallo
  • 1 serrano chile, finely chopped, for the pico de gallo
  • 1 tablespoon fresh cilantro, finely chopped, for the pico de gallo
  • 3 tablespoons lime juice, for the pico de gallo
  • 1/4 tablespoons salt, for the pico de gallo
  • 1/4 tablespoons black pepper, for the pico de gallo
  • 1/2 tablespoons dried oregano, for the pico de gallo
  • 1 1/2 tablespoons olive oil, for the pico de gallo
  • 4 slices sandwich bread
  • 1 cucumber, cut into strips
  • 200 grams smoked salmon

  • For the hummus, in a food processor add the chickpeas, olive oil, lemon juice, garlic, cumin, salt, pepper, and process until smooth. Add the avocado and process again until you have a creamy mixture. Set aside.
  • For the pico de gallo, in a bowl mix the tomato with the onion, jalapeño, cilantro, lemon juice, and season with salt, pepper, oregano, and olive oil. Set aside.
  • In a griddle or toaster, toast the bread until golden brown on both sides.
  • Spread some of the avocado hummus on each slice of bread, arrange the cucumber strips, the smoked salmon, and finish with a bit of pico de gallo. Enjoy.
