Vegan Alambre

  • 2 tablespoons vegetable oil
  • 1/4 onions
  • 1 tablespoon garlic, finely chopped
  • 1 cup bell pepper, colorful
  • 1 cup zucchini
  • 1/2 cups oyster mushrooms
  • 1/2 cups white button mushrooms
  • 1/2 cups ear corn, white
  • 1/2 cups asparagus
  • salt

  • green salsa

  • In a skillet with oil, sauté the onion until transparent, add the garlic and the colorful peppers, and cook for 1 minute. Add the zucchini, mushrooms, white corn, and asparagus. Continue cooking for 5 more minutes, season with salt and pepper, and remove.
  • Serve in a taco and accompany with lime and green salsa.
