1 cup fruit, chopped fruit variety (fresh pineapple, apples, oranges, strawberries, and organic grapes)
1/2 cups shredded coconut
1 tablespoon cornstarch
6 tablespoons lime juice
3 tablespoons sugar
3 tablespoons orange juice
1/2 cups tofu, smooth, pureed
2 teaspoons orange zest
1 teaspoon poppy seed, (optional)

In a large bowl, mix the fruit and coconut until well combined. Refrigerate.
Mix the cornstarch with the lemon juice in a medium saucepan and stir until well combined. Place the saucepan over low heat and add the sugar and orange juice.
Cook, stirring constantly, until the mixture thickens, about 5 to 10 minutes. Remove the saucepan from the heat and let it cool completely.
Add the pureed tofu, orange zest, and poppy seeds to the juice mixture and refrigerate for at least 1 hour.
