Vegan Ambrosia

The vegan ambrosia dessert is a variation of the traditional dessert, ideal for people who are vegan or lactose intolerant. Its ingredients are very nutritious, including tofu, poppy seeds, and coconut.

  • 1 cup fruit, chopped fruit variety (fresh pineapple, apples, oranges, strawberries, and organic grapes)
  • 1/2 cups shredded coconut
  • 1 tablespoon cornstarch
  • 6 tablespoons lime juice
  • 3 tablespoons sugar
  • 3 tablespoons orange juice
  • 1/2 cups tofu, smooth, pureed
  • 2 teaspoons orange zest
  • 1 teaspoon poppy seed, (optional)

  • In a large bowl, mix the fruit and coconut until well combined. Refrigerate.
  • Mix the cornstarch with the lemon juice in a medium saucepan and stir until well combined. Place the saucepan over low heat and add the sugar and orange juice.
  • Cook, stirring constantly, until the mixture thickens, about 5 to 10 minutes. Remove the saucepan from the heat and let it cool completely.
  • Add the pureed tofu, orange zest, and poppy seeds to the juice mixture and refrigerate for at least 1 hour.
