Try these delicious vegan pancakes with intense banana flavor. They are fluffy and delicious, accompanied by agave syrup for a better contrast. Best of all, they are very easy to prepare.
In a bowl, mash and mix the banana with the soaked chia, milk, oat flour, wheat flour, cinnamon, sugar, baking powder, baking soda, and agave syrup. Set aside.
Heat a non-stick skillet over medium heat and add a little coconut oil. Pour some of the pancake mixture into the center of the skillet and cook for about 5 minutes. Flip and cook for five more minutes.
Garnish with banana, fig, mint, walnut, and serve with agave syrup.
