Vegan Banana Pancakes

Try these delicious vegan pancakes with intense banana flavor. They are fluffy and delicious, accompanied by agave syrup for a better contrast. Best of all, they are very easy to prepare.

  • 1 cup banana
  • 2 teaspoons chia seeds, soaked in water
  • 1 1/2 cups almond milk
  • 1 cup oat flour, (flour)
  • 2 cups wheat flour
  • 1 teaspoon brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 cups agave syrup
  • 1/2 cups coconut oil
  • 1/2 bananas, sliced for decoration
  • 2 figs, quartered
  • 3 tablespoons walnuts, for decoration
  • 3 tablespoons agave syrup, to accompany
  • leaves peppermint, for decoration

  • In a bowl, mash and mix the banana with the soaked chia, milk, oat flour, wheat flour, cinnamon, sugar, baking powder, baking soda, and agave syrup. Set aside.
  • Heat a non-stick skillet over medium heat and add a little coconut oil. Pour some of the pancake mixture into the center of the skillet and cook for about 5 minutes. Flip and cook for five more minutes.
  • Garnish with banana, fig, mint, walnut, and serve with agave syrup.
