Vegan Chocolate Cookies

  • 1 1/4 cups almond flour
  • 1 tablespoon baking powder
  • 1/2 tablespoons salt
  • 2/3 cups cocoa
  • 1/8 cups olive oil
  • 1 avocado
  • 1/4 cups monk fruit, (monk fruit)
  • 1/3 cups almond milk
  • 1/2 cups chocolate chips, vegan, dark vegan chocolate, in small pieces

  • In a bowl, mix the almond flour, baking powder, salt, and cocoa. Set aside.
  • With the help of a blender, mix the olive oil, avocado, and monk fruit until you have a creamy mixture for 3 minutes, then add the vanilla.
  • Add half of the flour mixture and the milk, mix for 5 minutes.
  • Add the rest of the flour, the chocolate chips, and form a dough. Shape into balls about 2 cm in diameter. Place on a baking sheet lined with parchment paper and flatten with your hand.
  • Bake for 10 minutes at 180° C.
  • Remove from the oven and let cool for 5 minutes on a wire rack. Serve on a flat plate and enjoy with your favorite drink.
