Vegan Foil Pack

  • 1 head garlic, in half
  • 3 tablespoons olive oil
  • salt

  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 cup oyster mushrooms, in strips
  • 1 cup golden zucchini, or tender squash
  • 1/2 cups sun-dried tomatoes
  • 1 cup broccoli, in florets
  • 1 cup yellow bell pepper, in medium squares
  • 1 cup pasta, whole wheat, for pairing
  • chives, finely chopped, for garnish
  • cilantro, for garnish

  • Place garlic, olive oil, salt, and pepper on parchment paper and bake for 30 minutes at 180° C. Remove the garlic and scoop it out of the skin with a spoon. Set aside.
  • Place the vegetables and roasted garlic on parchment paper, add salt and pepper, thyme, rosemary, and cover with the same paper, rolling the edges tightly to prevent any liquid from escaping. Bake for 15 minutes at 180°C.
  • Serve on a flat plate and accompany with whole wheat pasta.
