Vegan Spinach Croquettes

Some spinach croquettes are a classic easy vegan cooking recipe.   • 1 potato, cooked
  • 1/2 cups quinoa, cooked
  • 2 cups spinach, in strips
  • 1/4 cups oats
  • 1/4 cups almond milk
  • 3 tablespoons breadcrumbs
  • 1 teaspoon onion powder
  • 1 teaspoon garlic, in powder
  • 1 teaspoon chile flakes
  • 1 teaspoon nutmeg
  • salt
  • pepper
  • panko
  • coconut oil, in spray

  • Preheat the oven to 180°C.
  • Place the potato in a bowl and mash until completely broken down, add the quinoa, spinach, oats, almond milk, breadcrumbs, onion powder, garlic powder, chili flakes, nutmeg, salt, pepper and mix until you have a homogeneous mixture.
  • Form the croquettes using your hands and coat them with panko.
  • Place on a baking tray, spray with coconut oil spray and bake for about 10 minutes, until golden and crispy, turning occasionally.
  • Serve and accompany with salad.
