Vegetable Patties with Guacamole

  • 1 cup quinoa, cooked
  • 1/4 cups onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 3/4 cups pumpkin, grated
  • 1/2 cups corn kernels
  • 1/2 cups queso fresco, crumbled, like panela
  • 1/2 cups breadcrumbs
  • 1 egg
  • 1 tablespoon parsley, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1 Avocados from México, for the guacamole
  • 1 tablespoon lime juice, for the guacamole
  • 1/2 cups cherry tomato, quartered
  • 1/4 cups red onion, finely chopped
  • 1 serrano chile, sliced thinly
  • 1 tablespoon fresh cilantro, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper, ground

  • Preheat the oven to 180°C
  • In a bowl, mix the quinoa with the onion, garlic, zucchini, corn kernels, fresh cheese, breadcrumbs, egg, parsley, salt, and pepper.
  • With the help of your hands, form the patties and place them on a baking sheet lined with parchment paper.
  • Bake the patties for about 20 minutes or until golden brown. Remove from the oven.
  • For the guacamole, in a bowl, use a fork to mash the avocado with the lime juice until you obtain a puree. Add the tomato, red onion, serrano chili, cilantro, and season with salt and pepper.
  • Serve the patties accompanied with guacamole and enjoy.
