Place the Eva® cauliflower bits in a bowl and dehydrate in the microwave for 5 minutes. Dry off any excess water with a paper towel.
Mix the cauliflower, egg yolk, cheese, and starch in a bowl, seasoning with green onion, salt, and pepper.
Heat the butter in a pan over medium heat and, using a ring mold, place the previous mixture to form the bread, cooking for 3 minutes on each side. Let cool completely and set aside.
For the portobello mushroom, heat a grill over high heat; when it is very hot, place the portobello mushrooms, drizzle with olive oil, season with salt and pepper, and cook until tender.
For the caramelized onions, heat a pan over medium heat with the butter, add the red onion and the yellow chili, and cook for 2 minutes. Add the refined sugar and red wine, cook until the liquid reduces and caramelizes, seasoning to your taste. Remove from heat and set aside.
To assemble the burger, spread a base of cauliflower with mayonnaise, another with mustard, place the portobello, the caramelized onions, and all the garnish ingredients. Serve with sweet potato or beet chips and enjoy.
