Vegetarian Burger with Hummus, Chia, and Capers

  • 1 cup mashed potatoes
  • 1/2 cups broccoli, cooked and chopped
  • 1/4 cups chia seeds, hydrated
  • 2 tablespoons capers, finely chopped
  • 1/2 cups Hummus Libanius®, 2 tablespoons for the burger mixture
  • 2 tablespoons red onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1/4 cups cornstarch
  • 1 pinch pepper
  • 3 pinches salt
  • 8 tablespoons olive oil
  • 1 cup arugula
  • 1 red beefsteak tomato, in slices
  • 4 tablespoons pickled Jalapeño chile, in rounds
  • 4 tablespoons Libanius® natural dry jocoque
  • 4 hamburger buns

  • Mix in a bowl the mashed potatoes, broccoli, chia, capers, 2 tablespoons of hummus, onion, garlic, cornstarch, and season. You should end up with a homogeneous mixture.
  • Heat 2 tablespoons of oil in a pan over medium heat, form the burgers with the previous mixture and fry, being careful not to break them. For 6 minutes on each side.
  • Heat the buns on a griddle for a few seconds on each side, form the burger.
  • Place arugula on one piece of bread, then add hummus, place the vegetarian burger, the slice of tomato, jocoque, jalapeño peppers, and finish by covering with the other piece of bread.
