Vegetarian ceviche

This ceviche is a type of fresh and light salad where many healthy ingredients are mixed.

  • 1 cauliflower
  • 3 carrots, peeled and finely chopped
  • 125 grams button mushrooms, fresh sliced
  • tomatoes, medium chopped
  • 2 onions, medium chopped
  • 12 sprigs fresh cilantro, fresh chopped
  • salt, to taste
  • 4 limes

  • Separate the sprigs from the cauliflower and place them in a glass bowl along with the carrot, mushrooms, tomato, onion and coriander. Season with salt and pour the lemon juice on top; mix carefully.
  • Cover and refrigerate for 1 hour.
